Default Sorbets

My son has been on a month long ice cream binge lately and honestly, I don't know how his arteries are taking it. I love ice cream too, but it's just not that healthy to eat it every night. So, I'm getting into making sorbets. Hopefully, he'll like them too. I've tried a few recipes with hit-and-miss successes.

The Chocolate-Peanut Butter-Banana was OK, texture was great, but the flavor of the bananas was overpowering.

The Lemon-Mint tasted great, but was icy

The Deep Chocolate had great texture, but OMG, it was so rich, not to mention expensive to make.

I'm looking for some new and different recipes that are relatively healthy. I've found that Xanthan Gum is a good thing to add to keep the texture creamy. It's an odd ingredient, but I think that I still have some from making homemade almond milk. I'm going to try to add a tiny bit of it to my next sorbet adventure.

Got any good recipes?
