    Default Sorbets

    My son has been on a month long ice cream binge lately and honestly, I don't know how his arteries are taking it. I love ice cream too, but it's just not that healthy to eat it every night. So, I'm getting into making sorbets. Hopefully, he'll like them too. I've tried a few recipes with hit-and-miss successes.

    The Chocolate-Peanut Butter-Banana was OK, texture was great, but the flavor of the bananas was overpowering.

    The Lemon-Mint tasted great, but was icy

    The Deep Chocolate had great texture, but OMG, it was so rich, not to mention expensive to make.

    I'm looking for some new and different recipes that are relatively healthy. I've found that Xanthan Gum is a good thing to add to keep the texture creamy. It's an odd ingredient, but I think that I still have some from making homemade almond milk. I'm going to try to add a tiny bit of it to my next sorbet adventure.

    Got any good recipes?

    Are you using the Ninja Creami? I bought the deluxe version last fall and have been having a grand time experimenting. I've learned that half and half cream works as well as whipping cream with less fat. My most successful sorbets have been mostly fruit (I'm partial to strawberry). I also love a pina colada sorbet which is made with a can of pineapple and a can of coconut milk. Ninja kitchen has a recipe for lemon sorbet that sounds divine but I haven't made it yet so can't comment.

    The grands got that Ninja thing. They made a bunch of things but I just don't like the texture. I tried to make the Wendy Frosty. It was good the first time I ate it, but, did not freeze right and was a block of icy stuff afterwards. I also have that Cuisinart Ice cream maker. Also, first time out of the machine, delicious, then freezes into a block. For me, and what I have tried, I'd rather have commercial ice cream. But then again, I am not eating it every night, or every day, or every week or month! I'd like to though.

    NO, I'm not using the Ninja thingy. I have a Cuisinart Ice cream maker that sometimes works. When it doesn't, I just put the mixture in the freezer and go and stir it occasionally.

    We liked the mango-pineapple sorbet. The Xanthan Gum really helped. I would imagine that Guar Gum would also work.

    Can I use a food processor to make sorbet? I'd love to try the pineapple/coconut one, or maybe mango/coconut. Love coconut milk!

    We have Cuisinart. I haven't tried sorbet, but I don't have a good recipe for that.
    my basic recipe for 2 person ice cream is:
    • 2 cups half-n-half
    • 1/2 cup Splenda
    • 1teaspoon vanilla
    For flavored, add another teaspoon of ....almond, or another extract. I have also added 3 tablespoons of cocoa, and cinnamon!
    I'll be watching for a sorbet recipe.

    Ya know...I was wondering the same thing. I'm going to try it. My ice cream machine is old and it really doesn't work that well. A food processor might stir it up enough to get rid of the ice crystals.

    Mangos are on sale in my area, so I bought 7 or 8 of them. I really liked mixing the mangos with some fresh pineapple for a springtime sorbet.

    Adding some cornstarch makes the ice cream creamy and held together.
    Here is the recipe I use for Wendy's frosty.
    The recipe I have is years old and handwritten but I found the same recipe using the same ingredients online here:

    I have the Yonanas frozen fruit ice cream makers. clearance at Walmart for $10. I use frozen whipped cream along with the fruit. Partially frozen fruit works best not frozen solid. It's noisy and doesn't get all the mixture out of it but easy to spoon out. Easy to clean. In all worth $10.

    I thought about using corn starch. I'm glad for that tip. Corn Starch is cheap.

    Ten bucks! That's a deal!

    Today I made "Mexican Chocolate" sorbet. I used cocoa, sugar, Xanthan gum almond extract, almond milk and a big pinch of cinnamon.

    I'm also going to try to make a "Tropical" sorbet this afternoon with fresh mangos, fresh pineapple, some toasted coconut and the other usual ingredients for sorbet.

    My husband really likes the sorbets. My son does not and refuses to eat them, but then he refuses to eat most of the meals that I make. He's on the "Early Death" diet and is following it religiously.
