One of my husband's favorite meals is stuffed bell peppers. It was time consuming making the meat loaf filling . He was still working and gone all day. He asked for the stuffed peppers for supper. A good hour to prepare, ugh. I cut the peppers in half long ways, filled it with Italian pre cooked frozen meatballs (the best I could find) poured italian sausage tomato sauce over it and topped with mozzarella cheese and baked.. He loved it. I've never looked back. Takes me about 10 minutes to prepare.
