Stuffed Tiny Peppers

My sister made some for us last week, so when I spied the tiny peppers at the supermarket, I invested. I also bought a small package of boiled shrimp. Softened cream cheese, cooked bacon to crumble, and chopped shrimp in food processor. Filled each pepper half and baked at 350 for 25-30 minutes. De-licious.

With regards to the peppers, are you talking about what some call "mini sweet peppers"? I suspect that is the best size of pepper but I can imagine using yellow and orange bell peppers, too. (Personally, I don't like green bell peppers cooked into food.) The yellow and orange bell peppers ones would need to be stuffed with lots of shrimp and a little creme cheese to bind the shrimp. The smaller peppers are a better choice for appetizer size morsels. Hot peppers can be used, too, if you like HOT mixed in with your shrimp and creme cheese. This sounds like a versatile recipe!

We've been making a "smoked salmon" dip since the 70s using canned salmon, liquid smoke, and cream cheese. When hubby went keto, we started filling the small colored sweet peppers (cut in half) with the mix, and then dipping the top in the nuts and parsley mixture -- has been a big hit at potlucks!
edit: we typically use walnuts, not pecans, and sometimes the hubby does a few in jalapenos.

One of my husband's favorite meals is stuffed bell peppers. It was time consuming making the meat loaf filling . He was still working and gone all day. He asked for the stuffed peppers for supper. A good hour to prepare, ugh. I cut the peppers in half long ways, filled it with Italian pre cooked frozen meatballs (the best I could find) poured italian sausage tomato sauce over it and topped with mozzarella cheese and baked.. He loved it. I've never looked back. Takes me about 10 minutes to prepare.

Iceblossom, thanks for the salmon recipe. I am definitely going to try it with the mini peppers. Always looking for different Keto ideas. Aaaaand I have a bumper crop of jalapenos this year--first time I've actually had good luck with them. My mouth is beginning to water!

Sounds like the lunchbox peppers you can get at the store. I've been growing them in the garden for the past couple years but rarely do they get as large as those in the store.
Funny thing of late is when you purchase plants and think you're getting what the tag says, occasionally you get something else. Again this happened to me at 2 different stores. My Gladiator Roma tomatoes are nothing but a regular tomato and my red lunchbox peppers are jalopeno peppers which I don't need at the moment. My sister and I have been taking cuttings off the plants in our garden and growing them in our heated garages under grow lights all winter long because we're getting tired of getting miss labeled plants. A friend of mine likes those peppers with just plain old cream cheese stuffed in them too.

I fill green peppers (cut in half top to bottom) with a sloppy mixture of shredded cheese, browned sausage ( or hamburger), instant rice packet, mashed tomatoes from the garden (or canned). Add more tomato juice if needed. The rice needs the liquid. Top with more shredded cheese, cover and bake.
