I cooked up some fresh, whole mackerel the other day. I seasoned each fish, inside and out with a little smoked salt, garlic powder, a squeeze of lime, a dash of pepper, then put it in a hot cast iron frying pan with a little olive oil. I browned both sides until dark and crispy. OMG! it was so delicious! I just put the plate on the table and the DH and I took chunks of it off and dipped it in some cocktail sauce and a few drops of chili oil. I still have some left that I'm going to make fish tacos with.
