What about french knitting...not sure what it's called in the US. Nails or U shaped brads in the top of a large wooden spool, wool wrapped around and the "knitting" forms a long snake as it emerges from the spool. We were taught this at around age 4. You can make heaps of things with it and it's quite safe for small people to do.
