Fiddleheads-The good: This food is very low in Cholesterol and Sodium. It is also a good source of Protein and Zinc, and a very good source of Vitamin A, Vitamin C, Riboflavin, Niacin, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganese.
I love fiddleheads. I either boil or steam them and then add butter and lemon juice. Yum. I have made them in the frying pan but did not like them so much. I even got my husband and my kids eating them.
