That's the way I make it, too, but I drain the liquid out of the hominy can before I fry it. It's really yummy. Do you use the white or the yellow? (I use yellow - I think it's a tiny bit tastier.)

Anyway, tonight I'm having a tuna sandwich on white toast and an ear of corn (steamed 3 min. in the micro), maybe some sliced cukes and green peppers on the side. Watermelon after.
Judging from the weather forecasts, the menus for the next several days will be VERY similar!

I purchased my solar oven, below is the information. I bought it to save money on cooking and cooling cost. I think you will be pleasantly surprised at what you can do with it. It cooks year-round. The internet is a great place for support and recipes.

I'm normally not much for salad, but I've been eating them almost daily in this heat. I don't know what it is about extremely hot weather that makes leaves (mixed greens) suddenly appealing to eat...

Hubby won't be taking me out to dinner tonight or tomorrow night or the next night for that matter. It's hay season and off to bale he goes. Temp is 105 today and he has lots of ice water with him. Tonight, open face roast beef sandwiches, mashed potatoes, corn on the cob, and cool cukes, peppers and tomato salad. Maybe some ice cream and then off to bed for him. Yeah!!! I can go back to my quilting!

Summer is the time I do several meats on the stove top ( less heat) And all week we add things like rice etc all done the fastest and coolest ways- so love a microwave. Every meal is always enough for at least two meals or more depending how it's served- hate to cook in the heat.- heck why cok anytime when I can do something with my hands- I know just call your personal house staf and have them do all of it and the cleaning

We use the grill or crockpot as much as possible. Sort of wondering about having an outside oven installed and maybe a stove?
