To Hot to Cook????? So now what???

Have never had cucumber in a sandwich before, would never think of it. Had a nice cold salad with Olive Oil and cider vinegar, salt pepper,garlic powder and some mexican cheese.
Outside watch the sun go down, nice and cool. ot to interested in eating at all in the heat.

If hubby doesn't take you out how about a nice cool salad with perhaps:
Mixed lettuce varieties, fresh tomatoes, slivered cucumbers, slivered peppers (colours of your choice), thinly sliced mushrooms, slivered green onion, perhaps a touch of thinly shredded red cabbage, a few pine nuts and oh yes, some lovely fresh strawberries.
If available, you can also toss in some cubed ham, chicken, turkey or even shrimp.
Dressing is your choice but I tend to go on the light side with a salad like this so I can savour all the different veggies.

The house is cool so no big deal cooking. DH grills beef and chicken on the weekend to last us for dinner meal during the week. We have seafood for weekend meals. I make different salads and have fresh fruit. I love strip streak cut thin, on top of a fresh green salad with strawberries. No clean up, inexpensive, and so good. We very seldom eat out.
