Making jelly
PRICKLEY PEAR to be more precise. My daughter and I picked about 20-25 pounds of Prickley Pear tops this past weekend and from that I got 48, eight ounce jars of jelly. I found another cactus plant and again picked between 20-25 pounds of tops. I extracted the juice and this time I put into the freezer for later use. See photos below.

Mom and I saw some of those outside a Mexican Grill last night, but I couldn't remember what they were called! And I certainly didn't think about making jelly from them....so cool!

I never new you could use the fruit. A few years ago it was popular as a "fancy vegetable". I always wanted to try it but never found how to do it. Is there anyone who knows how to prepare the flesh as a vegetable?
