1 pound kielbasa, cut into bite sized pieces
1 onion, chopped
1 can black olives, sliced
1 pkg mushrooms, sliced
1-2 cloves garlic, minced
1/2 box elbow macaroni, cooked and drained

Throw everything except the macaroni into a skillet and saute till the onions and mushrooms are cooked. Add to macaroni and stir. Can top with grated Parmesan cheese but it is good without it.

2 cans black beans with onions
2 cans corn
1 cup salsa (or 1 can rotel with chilies if you like spice)
4 chicken breasts

layer in crock pot and cook for 6-8 hours. Server over rice or alone with biscuits or bread.

asin turkey lettuce wraps
1 lb ground turkey, 1 medium onion chopped, 1 cucumber, peeled, seeded, cut into quarters lengthwise and then finely chopped, 1/2C peanut sauce, 2 TBS Hoisin sauce - 1 head Bibb or Boston Lettuce.
Brown ground turkey and onion in skillet. Wash and dry individual leaves of the lettuce. When turkey is fully cooked, add the peanut sauce and Hoisin Sauce, stir to mix well. When re-heated thru, add the chopped cucumber and put into serving bowl. Put a large spoonfu of the turkey mix in the center of a lettuce leaf - roll up and ENJOY!! Start to finish, less than 20 minutes..........
