There are shops in all of those ports. all were wonderful. When we cruised to Alaska, we shipped all our purchases home. That way, we didn't have to worry about so much heavy luggage mess with or the extra luggage fees. the quilt shops will ship them out for you. Have a great trip.

The shop that hosts a yearly retreat I attend is in Ladner, which is a fun little area to visit. http://quiltedbear.ca/
IF you want to drive an hour east there is Hamel's in Chilliwack http://hamelsfabrics.com/ Langley and Abbotsford both have a shop owned by the same company http://www.agreatnotion.com/ Coquitlam has http://www.quiltedtreasures.ca/ there may be a few I've missed, BUT if you are wanting to walk I think the only shop IN Vancouver is the one on Granville Island, called the Cloth Shop which I posted a link to before.
I don't belong to the guilds but they have an active Modern Guild http://vancouvermodernquiltguild.ca/blog/ and a few other guilds http://www.vancouverquiltersguild.com/
I'm actually an hour out of Vancouver but I know those 2 guilds show contact people on their link and they could give you more info for sure. Have a wonderful trip!
