As I was preparing vegetables to add to my chicken to make a delicious stock for chicken and dumplings, I was wondering if I was washing my vegetables enough to keep from getting some horrible thing like listeria or salmonella or whatever comes from the dirt they were grown in. How do you clean your carrots, celery, onions and parsly? I scrubbed them under running water and scraped the carrots, but did nothing to the onion. I am hoping that the boiling will kill anything left.

here is a good source of information to prevent listeriosis:
http://www.health.state.mn.us/divs/i...revention.html
cooking foods to the proper temperatures goes a long way in prevention.

Also, I read in today's paper that you shouldn't wash off your meat before cooking. If there's any bacteria on it, it will be zapped by the high cooking temps. In the meantime, all of us who've been rinsing our meat before cooking were spreading germs all over our sink from water running off the meat.

i read about the not washing meats, too. i agree about the cooking. however, my father in law was a butcher, and he said to wash the meat to remove the bone dust from cutting/sawing

Isn't it awful? Were told to eat fresh fruit and veggies, raw is better, stay away from process food ECt but now eating raw veggies are bad! They say even if your cutting onions, watermelons ECt to wash when u cut it u can introduce bacteria. Maybe we sHould stick to process food!

Why would you think it'd be safe without washing? Think about all the places it's been and all the people who have handled it .... before it arrives into your home?

I just made stock yesterday and I thoroughly scrubbed and cleaned ALL my veggies. I always have and always will. I even made potato soup yesterday and I soaked the potatoes with the peelings on them for a half hour and then scrubbed them. after I peel them I rinse each potato before cutting it in cubes.
