Made my turkey gravy:
Makes 6 cups:

3 lbs turkey wings (4)
2 medium onions, peeled and quartered
1 cup water
8 cups chicken broth
3/4 cup carrot, chopped
1/2 teaspoon dried thyme
3/4 cup flour
2 tablespoons butter
1/2 teaspoon pepper
Change Measurements: US | Metric
Directions:
Prep Time: 30 mins
Total Time: 2 1/2 hrs
1 Heat oven to 400°F.
2 Arrange wings in a single layer in a large roasting pan.
3 Scatter onions over top.
4 Roast 1 1/4 hours until wings are browned.
5 Put wings and onions in a 5-6 quart pot.
6 Add water to roasting pan and stir to scrape up any brown bits on the bottom.
7 Add the brown bits to the pot.
8 Add 6 cups broth (refrigerate the remaining 2 cups) add carrot and thyme.
9 Bring to a boil.
10 Reduce heat and simmer uncovered 1 1/2 hours.
11 Remove wings to cutting board.
12 Save wing meat for another use if you wish, or discard.
13 Strain broth into a 3 quart saucepan, pressing vegetables to extract as much liquid as possible.
14 Discard vegetables.
15 Skim fat off broth and discard.
16 If time permits, refrigerate broth overnight to make fat skimming easier.
17 Whisk flour into remaining 2 cups broth until well blended.
18 Bring broth in pot to a gentle boil.
19 Whisk in broth flavored mixture and boil 3-4 minutes to thicken gravy and cook flour.
20 Stir in butter and pepper.
21 Serve now or freeze up to 6 months

My son and granddaughter decided we should go out so I wouldn't have to cook all day. So, we are having our Thanksgiving Wednesday night and I still have to cook Thursday as I have five elderly gentlemen my husband wants us to take dinner to ON Thanksgiving. So, at least we will have leftovers to munch on Friday, Sat & Sund. while I finish all of my gifts

I made cinnamon apples twice, first batch failed terribly lol Cleaned out by fridges, gathered in my pototoes and sweet pototoes, have the leaves in the dining room table , table clothes laid out but not ironed :) Will make most of my cold foods Wednesday, be up really early Thursday. We could be having ice/ sleet Thurs morning, kinda worried about the electricity...would like to make my pies tomorrow but afraid my crust might get soggy......me and pie dough r not friends...lol

Just took my squash pie out of oven. Use my own butternut squash which seems rather stringy this year. Pie looks good! Hubby made 2 apple pies this AM - cooked my turnip, squash and sweet potato. Tomorrow cook turkey and will reheat and plate on Thanksgiving. I make a strawberry, pineappple and banana jello mold with sour cream layered in the middle. Pretty and good. Will have 10 people including a new 'fellow' my daughter is bringing. And, of course, the Patriots -that's the football team not our NewEngland ancestors (lol) - in the background. Go Pats! I am making my dressings and a spice carrot cake. No pumpkin pie this year for us. I am looking forward to that hot open face turkey sandwich the day after.

I'm in charge of desserts - but if I make them before tommorow my dh will eat them. So Wed is cooking day that way he won't have time to eat them all.
He was alreaady looking and asking today.

Today I chopped the celrey and onion and toasted and cut up the bread for the dressing. Tomorrow I'll make the dressing and bake my pies, so good to get a head start.
