I can wince in sympathy. I still have trouble metabolizing fats after having this exact problem. It does seem to be more prevalent in women who have had children. On the very positive side she is not going to be doubled over asking someone to put her out of her misery now. Just slowly add fats back into her diet. Her body will have to learn to adjust to not having the gall bladder to regulate how much bile is dumped into the digestive tract at one time.
I know this has worn you out as much as her. You might need to adopt the "new mommy" plan. Sleep when the kids sleep so you have energy do deal with the other stuff. Everything else is just a bonus.

This, unfortunately, isn't that uncommon. The Dr. told me that after having the same thing happen to me nearly, 27 years ago, when my first born was born. He said it had something to do with the hormones that are rushing through your body when you are pregnant.

The surgeon told us that he has removed gallbladders from 10 new moms this week!! And yes, he says it is the hormones.
I had to have mine out between our two daughters births. Sadly I have had problems with fats too for 18 years now. Interesting because the surgeon says this happens in only 1% of the surgeries. I think it is much higher than this as this conversation so clearly shows!

Guess I won't get to sew tomorrow either. DD wants me to come help her. Thats ok. I've been trying to get her to let me come help for weeks. And Saturday I'm going to my BFF's 9 year old DD's birthday party. They are having a guy bring reptiles to it. Whatever happened to clowns!
I think I'll just sit outside until that part is over. She can't serve the food until the demonstration is over so the critters don't get all riled up and eat the kids

I had a severe gall bladder attack less than 48hrs after the birth of my daughter(c-section).The dr. said when in med schoolthey learned "FAIR& FORTY"-said you're not FORTY but fair!he also said that gall bladders are often aggravated by pregnancy---by both hormones & by being shoved up from a growing baby! I was lucky in I had no stones only the disease! now 20+ yrs I still have the GB. A GB attack is the worst pain! quick recovery!!
