Grew them for the first time this year and the first part of our summer was sooooo good that my one plant has given a huge number. I was giving them away, cooking with them, making chutney with them and then ran out of ideas.

Then I found a lovely brownie recipe that uses zucchini, no dairy and no eggs. The family begs me every other day to make more of them, soft, chewy and very moist.

Certainly will do. I will have to convert the measurements tho, as it is all in metric.

I used to make lots of zucchini jam. Still eating out of the jars I had so many. lol.

Never thought of jam. Is the recipe on here? If not, would you put it on?
