I do it that way too but going to keep the instructions because for some reason as I do it I forever get it backwards. (Which drives me crazy because even though this is the only way I do it, I get it wrong the first time.....)

I'd like to add that this method would also be great to use if you have to splice in a piece of binding. (You're gonna ask me how I know, so I'll just tell ya.) 
I was happily sewing my binding on when I came to a regular splice in the binding that you make when you sew your strips together. This seam landed right on the exact same spot as the corner..augh! What are the odds? I tried to make it work, but there was just too much bulk, so I took out a 10" section of binding and spliced in a new section that didn't put the seam right there, but further down the line a few inches. Worked like a charm!
