I just posted a new topic called 'Wow, must watch' about a binding tute I watched yesterday and tried out today. It made my binding look fabulous. I used 3" with 1/4 seam because I like to leave a little batting on the edge to give it a little bit of a puffy feel. Watch that tutee, your binding will be perfectly straight.

i usually use 2.5 inch binding. then trim my batting and backing 1/4 inch from the quilt top. that fills the binding nicely.
