My first thought was bias binding as well. Also check out Sharon Schambers binding the angels youtube video. I just used her technique and it is absolutely amazing.

Another possibility is to use facing instead of binding. This is really much easier and results in an edge that lays perfectly flat. The only drawback is that you don't have that strip of color that the binding makes. http://www.youtube.com/watch?v=lwPe_84GBfY

Put it on your serger and do a 3 thread rolled edge.
