I must confess.
On the lighter one, I discovered that if you do it sewing continuously around the center then when you get to the center you have a very small long whole. Decided that it is caused by the width of the needle adding just a bit of overage. Am working on this. It helps in the samples to always have the center so you will see the previous seam on the top. Im working now to decide just where you need to put the needle in not to have this "growth" in seam. Small needle and thin thread helps
The light one looks good because when I got it together there was a small hole in the center. So I turned it over and fanned out the points and wrapped thread around the "blossom" and tied it closed......Now you know why it looks so good. But, of course, I can't write that in official instructions. But I needed to get a professional picture made.

How about sewing in groups of 3 and then putting them together first 6 then all of them. Start at the center and sew out so there is more control of each section and no hole. Also sew from the center to the outer edge each time. They are beautiful, love your color choices.
