I do it all the time. When ever I go to a retreat, my back hurts so bad because I have to cut and iron standing up.

I usually stand but currently have a broken foot -- so I am sitting and cutting.

    Curious.
Stand to cut, pieces turn out better....like to move around.... good for circulation and get stiff sitting....sit enough at this computer lol

I cut standing but have been known to sit down to do recuts. Guess I'm saying it's a question of scale.

However I do the cutting for a project, sitting or standing, I make sure any other fabric I need to cut for the project is cut from the same position.

I usually cut standing at my cutting table but often sit trimming blocks up to 9 1/2". I was at a retreat recently where the cutting tables and ironing boards were at a great height, my back never bothered me standing at them. May in Jersey
