I cut all my threads as they look ugly to me and get in the way and so I try my best to get them all cut. I think either way is okay.

This is exactly what I do also...

I do cut threads, but I have a dumb question: how do you put the threads between the quilt layers?

Are you my long lost sister?
That was drilled into us too ... must trim and keep it tidy.

Annnnnnnnnnnnd you never re-did a seam (widened, straightened, etc.without taking out the previous stitches. And every time I don't do that now, I can hear my Mother chanting at me from beyond!! :)
I must be a cousin! Trimming and neatening my sewing was drilled into me at an early age and Mom-infused habits are hard to break. My mom laughs at me now when I complain about how hard it is NOT to do something she taught me about sewing.

I always trim. I,too, was taught to always make the back a neat a possible. And I would hate to get a quilt FINISHED and find a thread show behind a light fabric.

From the point of view of a LA quilter, I can tell you that having loose threads on the back of the quilt top is a real nuisance. They show through to the front on light colored fabrics. All the trouble to do a good job on the quilting goes for naught if there are those ugly threads showing. So clip them, please.

I trim as I go. Don't like dealing with a mess of threads.
