I find the bigger fabric shops confused me when i first started quilting...I almost always went in and left with nothing. I am getting better now, but it can still be overwhelming
JT is right, find a small personable shop, take your pattern with you, and they will guidde you like butter through the whole process of colors and tones and prints.

first go to paint store, get all the blue paint chips samples, try them out in the room you want the quilt, find the best ones, now when you go to the fabric store you have samples of what goes best in your room, find the fabrics, no worries. have fun, happy stitching~~~~~~~~~~~`~

I do the same way..Its so incredibly Overwhelming! I have to force myself to buy fabric and then..when I get around to an actual "project" have to go get more because I'm missing an important piece. Its crazy! I am forcing myself to use what I have in the coming year...close enough will be good enough. I also have started salvaging the clothes that my kids have outgrown or that are stained and such..I have quite a pile of usuable fabric ON TOP of my already Large stash.

Stash building is the other half of my quilting hobby. Even DH understands that "NEED" is not a necessity when it comes to the color/fabric choices. When I run into a pickle with a particular pattern, I take DH with me and he is amazing at picking out the perfect mates. Right now I have 3 orders waiting to be delivered and it is all fabric I think I actually need. teehehe.

Have you tried using those paint chips cards from the hardware store to help get your colors? Once you find the right one, you take that card to the fabric store & come as close as possible.

No,I haven't had that problem. I'm more likely to be needing a dozen quater yd cuts & have trouble stopping.There are always more & more beautiful fabrics I don't need. Want is a different thing :-)
