I paper pieced my Hunter's Star and although it uses much more fabric, it turned out beautiful. Hope you find a way that works for you

I'm wondering - did you starch them before or after cutting them out? Starching the fabric before cutting it will prevent stretching of the bias edges.

My first 2 quilts were Hunter's Stars, I paper pieced them both and had no problem. I had them professionally quilted, and the ladies in the store were very surprised that they were made by a beginner. I hope you're not too discouraged to try again!

I taught the Rapid Fire Hunter's Star by Deb Tucker to 17 quilters of various abilities and they all did well. You do need to read the directions carefully and do as she says. You are not smarter than Deb Tucker, regardless of how long you have been quilting. She designed this ruler and knows how to use. You can also see tutorials on her website using the ruler.

I also used the paper pieced pattern from Quilter's Cache. It was fairly easy, but not all my points are perfect even with that.
