I wouldn't do a totally jumbled log cabin because, IMO, the eye likes to be able to recognize a pattern of some kind. It doesn't have to be a rigid pattern, though.
I might try a partially jumbled log cabin by dividing lights and darks first, then randomly apportioning mediums to each pile. Each square would be gradated, but the gradation would be either to the lighter side or the darker side.

My Mom did a log cabin like you are saying....it came out really nice and all us girls are argueing who is going to get it.....it was her first log cabin and even the strips are way off....but it is awesome.....give it a go.....:-)......but don't forget to show us.......:-)
