I would not have thought to use paper piecing for HSTs. Would someone mind explaining the benefits of the method specifically for HSTs? I’m assuming you still need to trim every HST, the part I despise as I work through 400 2.25” -2.5” ones .

I have used triangulations for years. I use newsprint paper from Amazon which is much cheaper than the branded paper. I also reuse regular printer paper on the larger HST. It is easier to tear off the larger ones. Use a 1.5 stitch.
The accuracy of using the paper method vs drawing lines on the fabric can't even be compared. Time wise it is so much better to have the accuracy.

The aforementioned website is a great resource. I've also used Thangles, Triangulations and Triangles on a roll. My go to, is either the freebies from www.quiltingandwhatnot.ca or Thangles.
