If you don't find a two color pattern you like, you could also add some red or white tone on tone printed fabrics or fabrics with just red and white pattern like a chevron or stripe to give you more to work with.

I always recommend Illusions quilt pattern for two fabrics. I think it would be perfect for it. I have made two, using a print and blender.

Two color quilts are my favorites, and I am going to attach 3 pictures, in case any of them might work for you. :)

The first is an alternating rail fence and 9 patch set on point. The second is called Double Slice Layer Cake (video from Missouri Star) made from a layer cake (obviously) and the third is a Warm Wishes.

As the cover is going to get a lot of wear, I would really pre-wash the red to make sure it's not going to bleed on the white!

Sometimes simpler is better. Does SJU have a fabric that you can buy? If so...consider using the SJU fabric as a center panel. I make mine WOF wide and WOF + 10 to 15 inches for length. The center can be longer. Then you can use any fabric that has those colors in it as outside mitered borders. This makes a really modern looking twin bed quilt. I make the whole back with either of the fabrics.

My grandkids....9 to 23 love these more modern type quilts. My grandson, who is 10, told me he would love any quilt I made for him, even if it was old-fashioned looking. DUH..... I will NOT be considered old-fashioned. That was my grandmother.
