I always use Presencia 60 weight thread in color No. 216 to piece with. It's described as a medium beige/gray. I am starting a quilt with a white background and wondered if I should use white. The problem is all of the other colors in the quilt. I think I'll stick with No. 216.

I have been real happy with using Aurifill color "dove". It is a very light gray.
the only time I am specific is with white fabric or black fabric. Other than that I usually just use a neutral - taupe, grey, cream or a 'denimy' blue. These tend to blend in with most fabrics.
Unless it is a quilt with mostly black fabrics, I use grey, lite/dark, beige and white. I find grey is a great neutral thread to use for most fabric piecing.
I have noticed the odd or bright color threads are on sale more and for less then the neutral color threads. I got a case of bright red aurifil thread for $2 a cone. The neutral color was $6 a spool at the same sale.

I use the most neutral to the fabric thread I can. Grey's and beige are a good match to most fabric color ways. But, I have matched up the fabric with thread to the main background color too. Like blue on blue fabric.

I use aurifil beige ..... But also I will use up a spool or bobbin of left over thread
Beige or grey my go to color threads.
I like Aurifill in cream, light gray, or beige. It is very strong but thin enough that my piecing is more accurate.

when im making a scrappy quilt I use all my bobbin threads up so I can empty my bobbins , because somewhere I will need an empty bobbin for when I will need to match the cloth. and this is a good place to use up small amounts of thread left on a spool
