It depends on the thickness of the fabric once they are sewed together. Sometimes I will just finger press, other times need to steam to make things lay flat.

I sprinkle or spray unless in a quilting class where iron is filled.

I steam - gently, (I think) it allows the fabric to "relax" so I end up with a better setting.
