How about the Uneven Star pattern? Once you get the hang of it, you don't need a pattern, and it looks great scrappy. Some sites say it's paper pieced, but it doesn't have to be. It's a nine patch, and our group did one in three hours with one background and all our scraps for a family in need. We sashed it, and had uneven star corner stones.

My favorite fast and easy pattern is Wicked Easy . The pattern is designed bywww. ByAnnie.com. It is a free pattern ..I liek it because you can use FQ or scraps from your stash.
I make this for the comfort quilts or a fast gift.

Warm Wishes is my go-to quick quilt. It's great for focus fabrics, is easy to piece and looks a lot more difficult.

I don't think anyone has mentioned "Cheaper by the Dozen". Like Turning 12 and Yellow Brick Road it uses fat quarters - 12 of them. I also have used "Cheaper by the Half Dozen" for a baby size. Those 3 are my go-to's for quick ones. Also have used Wickedly Easy and Warm Wishes.

Patterns from Fabric Cafe are very quick and easy - I adjust them as needed for the size I need.

I like the Log Cabin Quilt in a Day from Eleanor Burns. You said you have made a log cabin and one of El. Burns', but not this one? It is easily strip pieced! You can divide the darks and lights and make it scrappy with the darks on two squares of the block and the lights on the other two sides. Then use medium scrappies for the borders.

My old stand by? I like Yellow Brick Road & have made it in every single & color variation known to man... LOL! But I can do a lap size or smaller in a day (an afternoon if the dog doesn't need let out too often... LOL!), so it's my tried & true/

The District quilt by Lyn Brown is fast, easy and looks great. I have made 2 recently as baby quilts. If you want to make this really fast, you can use the pre cut layer cakes and charm squares.

I love Lucky Stars...takes awhile to do the cutting, but once that is done, the quilt goes together fast. Also, "just" making strip sets, and then 4 patches or 9 patches and setting them together different ways when enough blocks are made. Yellow Brick Road is also a good one for fat quarters.
