I agree with quilticing. I generall cut 2.5" and fold in half. My walking foot lines up slightly more than 1/4" and this gives me a 1/2" binding, but if I want it a bit wider I cut 3".

I cut mine 1 7/8 inches. I make a 1/4 inch seam to attach it to the quilt. Cut this size and making a 1/4 inch seam makes for a nice tight binding. Judges really like full bindings, when you feel of the edges you don't feel any empty space, the binding is full. I don't know what you do with all the extra fabric when you cut it wider. I like mine to be 1/4 inch on the front and 1/4 inch on the back, looks very nice.

Since you use 3" binding when you attach to your quilt do you sew it at 1/4 or 1/2 inch? I did a 3" binding on my first quilt but sewed it to the quilt at 1/4 and it seems I had to much freedom of material when had sewn to backside. I sewed to backside right beneath the stitch line.

I use 2 1/4 for regular fabric on quilts but I use 2 1/2 for flannel to allow for the thickness of the fabric.
