Warm Wishes is a free pattern online. It is always quick and looks complicated. And I like a rail fence quilt too.

Disappearing 4-patch is relatively quick, easy and looks intricate.

How about 'Half Step Block', 'Bento Block' or HST with one color in each of the blocks.

I like nine patch blocks alternating with snowballs. Can be very effective, depending on the fabric you use.
