I made my first quillow for a friend for Christmas. She loved it. Who knew sewing 2 different fabrics and a batting together and adding a 18 inch pillow top could make someone so happy, but it did. :) I did one side forest green and the other side pink, white, green flowers.

the definition of a quilt is ..
3 layes held together with stitching or ties...so if you have 3 layers and you quilt it....it's a quilt :)

I have made a few quillows. Mine are all regular quilts with an attached pocket that the quilt folds into. My DH asked me to make a lap quillow with the pocket quilted too, so he could put his chilly toes into the pocket when he is reading.

While every quilt show has a definition of a quilt, they are not always the same. My view is that unless you are showing the quillow, it's up to you what you call it.

My quillow is a patchworked, quilted quilt. No different from my other lap quilts except it has the pocket (also pieced) on the back to fold the rest inside.

Here's the pocket, with little GFG flowers

And the quilt itself has larger GFG flowers

Does it really matter if they're quilts or not?

ABSOLUTELY they are quilts. They are two layers of fabric with a layer of batting secured through all layers. It even has a bonus pillow attached.

I have made several quillows and they were quilts in them. So I think yours also qualify.
