And that's why I love my ancient Pfaff machine! I can adjust the needle to any degree; don't have "clicks" or set positions just dial as much or little as needed! Also love it for doing triangle corners, etc. Corner folds over much better if the diagonal seam is stitched just to the "inside" of the corner piece! Fold line = blue; stitch line = red. NB: I do not trim the corner from the bottom piece; or if I do, not till after I have aligned both corners and pressed it. This way if a seam is not sewn exactly right, aligning it before pressing will correct it nicely. I love it for Flying Geese, etc.
For Josie's Nana and Ok Suzie you can always put tape on your machine bed like this for a scant seam - the red tape. (The green is for centering up large diagonal seams.)

First ever Flying Geese! no-problem!

It is called an adjustable needle posisiton function on my machine. I can press a button and it moves the needle is small increments to the left or right. Each setting moves the needle about the distance of one thread in the fabric.

It was hard for me to finally get a consistent 1/4" seam in my piecing. Then I learned about the scant 1/4" seam. I found that if I use very thin thread upper and lower the 1/4" seam will be like the scant 1/4". All my 1/4" feet won't adjust to making a scant and I haven't found a scant 1/4" foot anywhere.

I agree why say 1/4" inch and then change the rules to a "scant" , my machine doesn't adjust 1 or 2 clicks :?

My take on this is: If I'm not doing a swap block, then the final dimension will be what it will be. To he** with scant seams!
