What is the cut width of your binding strips?

Two inch. Sometimes if the quilt is very light weight, I pack very thin slices of batting into the binding to create a nice firm edge. Supposedly, these firm edges wear longer than flimsy ones.

I want to try a new to me method of sewing down the binding. My sister told me about it and you sew it to the front, and then fold it to the back and stitch in the ditch on the front, catching the back. My sister pins in the ditch on the front, making sure that the back is pulled over enough. Does anyone use this method-and if so, what width do you cut it and what seam allowance do you use? I'm nervous to try it for some reason.
