One of our board members ShellyQ did a series of block tutorials for beginners...they are wonderful for learning new blocks and also for doing variations. these are in the Tutorial Section

Having made only three blocks so far, a Nine Patch, a Log Cabin and struggling with Fair and Square, I'd say the Log Cabin was by far the easiest even though it has the most pieces.

ok I have done half square triangles. I still need to learn a LOT of quilting terms. Log cabins look hard...glad to hear they're easy! I may have to give them a try soon.

for quick and easy i like pin wheel or flying geese especially for a baby quilt

I am in love with pinwheels right now! and they are so easy.... draw one line sew two and cut once!

Now if I would just get around to dying the fabric to make 2704 2 inch HST which will turn into 676 3 inch pinwheel blocks we would be in business! lol

I think shoofly is about as easy as you can get, think that will be my next one! I m working on a dnp lap quilt now! Would love to finish this long weekend, we will see, lot going on! Your basic 5" block is easy with alternating colors, easy to do strips.
