I like my I Spy quilts to be directional too... so the children can look at them all 'right side up' from one position. Since it's such an easy fix, I would definitely change it.

I would leave it....that way the quilt is the 'right' way no matter what side is up! (can you see if from a galloping horse? Nope!? Not a problem!) JMHO...
