I agree on the binding. I mostly turn my quilts like Eleanor Burns so there is no binding. On family quilts that are more heirloom I still bind or for quilt show quilts. I do 3 quilts a month for our guild baby project and hand sewing binding is so time consuming I started turning the quilts and then sew a double row of stitching around the finished edge.
I put down the batting, the backing right side up and the top wrong side up. Sew 1/2 in seam all around leaving an opening on the long edge of the quilt. Trim the corners to reduce bulk and turn right side out. I then press and pin for quilting.

I made that term up. lol It's based off "crumb blocks" but my pieces were more chunky. ;-)

I sew the binding strip to the back of the quilt first and then turn it over to the front and stitch it down with a straight stitch or decorative stitch. I can't do all that hand work anymore.
