My quilt instructor at my LQS was showing a gal exactly how to avoid that bulk you are describing but I did not watch as I was working on something else. I will ask her on Tuesday when I see her again. Love your block though. Good job.

They look perfect to me and such a great job for the first ones. I've heard of fanning them out at the center, I've not done it. Now I just avoid quilting over the bulkiness.

I press in a spiral pattern where the center lays open. Unfortunately do not know how to instruct how I do it, just do.

Somewhere on this site there is a sample of a technique from eleanor burns that explains how to help make that center seam flatter. Basically, you take 1 or 2 stiches out where the 4 seams come together and then fan the seam allowances out. wish I could help more, but you really need to see the photo. I had the same issue and the technique works great to give you a nice flat center.
