What do you mean fold the material back, that it's not really curved piecing? Can you elaborate?
Fold a background square diagonally with the wrong sides together. Place this folded triangle on top of a colored square.

Is this the same technique that is used in Cathedral Window? If so, maybe people could look up a tutorial on that to better understand what you are explaining. Your quilt is beautiful!
