I would use a very narrow binding -- doing anything wide would make it difficult to get around the blocks.

Another way would be to make a facing.....cut a piece of fabric that is the same shape as the edge on one side, straight on the other. Stitch the matching edges together, then turn the whole piece to the back (you may need to slit the seam allowance on the inside corners to get it to turn nicely). Turn under the straight edge and stitch down.

I've done binding on uneven edges before. It's not really hard, just do bias binding. You can machine stitch it to the front and hand stitch to the back.

With the small pieces it's a bit of a PITA (pain in the ___) but it looks gorgeous when it's done.
