I love quilting with Minky on the back but only with the longarm. If you have the stretchiest direction of the minky going left and right it quilts up wonderful. Usually for all my small quilts (samples) I use the minky, they make nice and warm cuddles for our cold winter evenings here in SD.

LOVE THE QUILT. MY DAUGHTER IS A HORSE PERSON ALSO. IS THAT PATTERN TAKE FIVE. I have been either using flannel or minky on the backs of my quilts too. I use a sweet 16 to quilt and so far fine, except you have to pin some as the spray baste doesn't stick good. But otherwise it's fine to quilt.

It is a five yard quilt pattern. Glad it works well for you.
