Thank you for all the suggestions and pictures. I think I have a good idea of what to do now. I think I have narrowed it down to 7 different patterns I will make using different colors. All of the suggestions were great. Thank you sew much for helping me out.

Check out the Quiltsforkids site. They have some free patterns on their site that you might like.

Strip quilts go really fast. Also use backing as binding is quick.

Good luck with your project. Rail fence and Mile a Minute to use up some of your scraps would work.

I would take all the plaid at the bottom and make a very quick rag quilts, either if they are flannel or homespun. Is fast and sells very well because is warm and cozy. You can whip one a day.

It looks like you have some homespuns on the bottom row, what about some chinelle quilts? or rag quilts, if you have good scissors to cut them fringe with...

Actually they aren't homespun they are poly/cotton plaids.

Try the Raggedy Bricks Quilt for your plaids. It's shown as using flannels, but you could do it with cottons and not have the rag edges.

Thank you! That is what I was thinking of doing but couldn't quite get it straight in my head.
