Cute! I agree, leave off the borders. The turtle looks kind of funny with the wall going between his shell. It's a great idea and I'm sure it will be great for the restaurant.

It is really cute, the turtle is so cool i think it should be pieced together like you said. But i love it.

You could sew window sashing over the frame areas to make the sections seem as seen through a window and that would connect the sections also. You could use the wood that matches the border for a rustic look.
