Fresh corn.......
So, since it is fresh corn time here in Illinois, I am in my glory...I love fresh corn on the cob! Yesterday I made a small batch of potato salad and had one ear in fridge and thought...hmm, why not. So I popped in micro for 3minutes, slid it put of the husk,ran under cold water to cool and cut kernels from cob and mixed into potato salad....and it was good! A new recipe has been born! Any other interesting corn recipes out there? Next will be zucchini overload!!!!

I love it plain, just steamed, no butter or salt. Yum! It would make delicious scalloped corn.

There has been a recipe going around Facebook that has corn, tomato's and avocado (and a few other things as well). Three of my real friends made the recipe and they all proclaimed it delicious.

We had a Zucchini and Corn dish Wednesday at our Monthly Lunch and Learn, that was awesome. Made it Thursday. It is available on the University of Kentucky Cooperative Extension Service Website.
Zucchini and Corn 1/2 cup sliced green onion 2 Tablespoons margarine (I used butter) 4 cups fresh corn, cut from the cob (I used frozen, thawed) 1 large zucchini, cut in 1/4" slices (next time I will add more) 1 medium tomato, peeled and chopped 1 tablespoon chopped fresh parsley 1/2 teaspoon salt 1/4 teaspoon pepper Makes 6 3/4 cup servings. 1. Sauté green onion in margarine until tender. 2. Stir in corn and zucchini and cook 10 minutes until tender. 3 Add tomato, parsley and seasonings, cook until heated. NOTE: Substitute other favorite vegetables as available. Try yellow squash, cubed eggplant, or peppers. |

Fresh corn and tomatos and a potato salad sandwich- my favorite sumer snack! Put the water on and go pick the corn and tomatos and, of course, soft white bread for the sandwich.

I used to always put fresh corn into the freezer during season. Just lower the corn into simmering water for about 2 minutes and when it is cool enough to handle cut it off the cob. Put into pint baggies and freeze for those long winter nights and corn chowder or taco soup.
Diverticulitis prevents me form enjoying corn anymore. But, I used to love it frozen and ready to reheat for a meal. I still make Chow chow for friends and family though. They would be very disappointed if I didn't. |

Here in south Alabama, our corn season is over and done with, but we had a great one! Now I'm wishing we had put up a bushel of that Silver King corn . . . . . |
Corn on cob, cooks in dishwasher... Discovered this as I was working in military base, their micro broken, and soldier wife brought in batch of corn, by time get home, it would wilt in heat.. So couldn't wait for fresh corn, threw in 1doz. in dishwasher. Imagine the officers expressions.. I was civilian staff..
