    When fried they get crisp on the outside, but when you put the salsa and cheese on them and bake they are soft.

    The best I've ever had were at the Taos Inn on the square in Taos. Blue cornmeal batter, crispy with a green chili and beef sauce on top! Pine nuts and cheese inside - To die for and I can't re-create them - I've tried and they're just not the same, boo hoo! But then, I've never had a bad chili relleno!!
