Cream Cheese Muffins - Low Carb/Sugar Free
CREAM CHEESE MUFFIN
Tastes just like cheese cake! I know, I'm creating a monster here...
100 calories - 1.5 carbs each!
2- 8oz. pkgs Philadelphia Cream Cheese
1/2 cup sweetener such as Splenda or Xylitol
2 eggs
1/2 tsp. vanilla or almond extract
Soften cream cheese about 40 seconds in microwave.
Add remaining ingredients.
Beat with mixer until smooth.
Pour into 12 muffin pans lined with papers.
Bake at 350 for 20 min.
Cool & store in the fridge...and HIDE THEM!

Cheesecake is one of my weaknesses. I don't know if I want to try this recipe or not because I will eat them all. Are the papers hard to remove after refrigerating? Not that a little paper will stop me of course, I was just wondering about using those new plastic heat resistance liners.
