Electric Roaster Oven question

My oven died today...and it's going to take 2 weeks or so (hopefully less) to get the part. I guess everyone's stove went out too and needed that same part :roll:
Anyways, to those of you that have one, have you done any baking in it? Like cupcakes or something other than turkey or chicken?

"Back in the Day" my Dad was the chief engineer at Nesco. In the hot summer, I have used my roaster in the basement to bake pies, using the rack to sit them on. Mind you, this was before the day of microwaves and convection ovens but I don't remember it being any problem.

Years ago, my oven was out of commission for almost 3 years. I borrowed a Westinghouse Electric Roaster from my SIL, and used it for everything. Whatever I did in my regular oven I did in the roaster and everything turned out absolutely great. I could only bake one cake layer, one pie, a dozen cookies on a 9 x 12 cookie sheet, etc. at a time, but everything turned out great.
