    Look at this site and scroll down to Phytohenagglutinin, that is the toxin in beans. Lots of good information about it.

    IMHO I think this is hogwash. The studies were done over 30 years ago,and not well controlled. I can point out lots of logical sounding research done 30 or more years ago that have been refuted later. I' m going to keep on being a crocked- out- bean- eater.

    It's pretty much only kidney beans and black beans you need to worry about. And that's from much newer research. These beans should either be soaked for 12 hours before draining and cooking, or boiled for one minute.

    I'm not sure I would trust hardly anything the FDA has to say.

    I totaly agree on not trusting anything the FDA has to say I was also raised on lots of bean soup and still like it and has never made me sick it is the food coming in from China that we really need to be worried about and I really read labels on this also all the chemicals added to our foods in this day and age the GMO's round up ready and roundup bis more dangerous than DDT ever was and these foods are soy, corn and sugar beets I will not eat any of those also one of the worst food ingredients is fructose corn syrup found in almost everything that is why I cook from scratch and READ labels

    I never met a bean that I didn't like. I'm 70 now and would have been dead for a long time if beans are toxic.

    Do not eat beans that are not thoroughly cooked, (SOFT throughout). Pasta can be al dente, but not beans! You can can beans of all kinds. Put a cup and a half of any dry beansin a quart jar, fill with water to the neck, add a teaspoon of salt and process in a pressure canner at 10 lbs for 90 minutes. Then you can have cooked beans whenever you want them, no soaking or waiting..

    Cooking from scratch it by far the best way to go and stay away from the soy,corn and sugar. I don't eat lots of beans, mostly eat them as soup in the winter, yummm.
