FIRE AND ICE SALAD
Bring brine to boil for 1 minute then pour over prepared onions and tomatoes. Let cool then add cucumbers. Refrigerate. (do not reuse brine, it will be too diluted). Use glass or plastic bowl.
3/4 cup white vinegar
1/4 cup water
6 Tblsp granulated sugar
1 Tbsp. Mustard seeds
1/4 tsp. Cayenne powder
5 tomatoes, cut in wedges & seeded
1 sliced onion
1 peeled and sliced cucumber (I like English cukes)

CUCUMBER BREAD
Combine dry ingredients in large bowl
1.5 cups flour
1 cup granulated sugar
1 tsp baking soda
1 tsp salt (or less)
1/4 tsp. baking powder
1/4 tsp ground nutmeg
1/4 tsp ground cloves
Whisk wet ingredients in separate bowl then mix with dry ingredients
2 eggs
1/2 cup vegetable oil (or applesauce)
1 tsp vanilla
1 tsp lemon juice
Prepare cucumbers then add to batter. Grate a peeled & seeded cucumber. Drain & press out liquid. To further squeeze liquid, put in clean white dish towel and continue to squeeze as best you can. Add 1 cup of it to the batter. Optional - add 1/2 cup chopped pecans to batter. Bake 350 in greased loaf pan for 55-60 minutes. Cool 15 minutes then tip out onto wire rack. Glaze when warm with 2 Tbp. milk mixed with 1 cup powdered sugar.

Wow! Both of those recipes sound great. I've never heard of cucumber bread. I have cukes coming out of my ears these days. I may have to try that one. The Fire and Ice recipe sounds good too. Thanks.
